Easy Muffins

Ingredients

Egg

1 egg

Whole Milk

120ml milk

Vegetable Oil

4 tbsp vegetable oil

Plain Flour

200g plain flour

Caster sugar

100g caster sugar

Baking Powder

2 tsp baking powder

Salt

1/2 tsp salt

Method

Preheat oven to 200°C/400°F (Gas 6). Grease a muffin tin.

Beat egg with a fork. Then stir in milk and oil. Sift flour into a large bowl. Add sugar, baking powder and salt. Add egg mixture to flour and stir until flour is moistened and lumpy, if the mixture is smooth then you have over mixed it.

Fill muffin cup cases 2/3 full. Bake for 20 to 25 minutes until golden brown.
